Cheese Spread
1 package sharp Cheddar cheese, shredded
5 green onions with tops, minced
5 slices bacon (cut in small pieces and cooked)
1 cup chopped pecans or almonds
1/3 cup mayonnaise (not salad dressing)
Bacon drippings
Combine bacon and shredded Cheddar cheese, pouring on about
2 tablespoons of hot bacon drippings. Add nuts, onions, and
enough mayonnaise to bring to spreading consistency. Chill 4
or 5 hours, overnight if possible. This spread improves with
age and will keep 2-3 weeks in refrigerator. Take out ahead of
time and allow to soften for easier spreading.
