Bruschetta1 loaf of good Italian Bread
1/4 to 1/2 cup olive oil (very good quality)
3 to 4 very large ripe tomatoes
1 small Bermuda or Vidalia onion,
chopped fine
1/8 to 1/4 cup Balsamic vinegar
Salt and papper
3 to 4 cloves of garlic
Basil to taste
Slice bread 3/8" thick. Toast the bread slices and while
hot rub each side with the cut side of the garlic. Drizzle
olive oil over toast if desired. Chop tomatoes into small
pieces; mix with the minced onion, olive oil and Balsamic
vinegar. Taste. Add salt, pepper and basil to taste.
