Patrick Pomarès: Pastry Chef
Patrick Pomarès was 15
years old when he fell in love with pastry cuisine and decided
to go and study the art in Draguignan, where he stayed for six
years - after which he discovered Cannes and spent three years
at the Palm Beach Casino.
Between 1988 to 1991, he spent several seasons at a ski resort
called Courchevel, at the Carlina hotel before moving to
Meribel and the hotel Belvedere (1* Michelin Guide).Patrick
first met Serge Gouloumès in 1991, when they opened a great 4*
hotel, Aspen Park in Méribel, which achieved a rating of 14/20
in the Gault et Millau.
After two years, Patrick needed more sunshine, so he headed
back to the South of France, to the Mas du Langoustier (1*
Michelin guide and 17/20 in Gault et Millau), beforespending a
few months at the Hotel de Crillon with Christophe Felder, the
national reference in pastry.
Then, in 1993, he discovered a great house where he felt very
much at home: la Côte St. Jacques in Joigny (Yonne Departement)
where he spent nine years. The hotel and restaurant is one of
the leading establishments in gastronomy: 3* in Michelin and
19.5/20in Gault et Millau!
During this time, Patrick honed his skills to the highest
standard, whilst managing to make time to train other pastry
chefs around the world, including Le Méridien in London and
the Hotel de l’Europe in Moscow.
In 1998, he was named “Best Pastry Chef of the Year” by
another famous French gastronomic guide: Guide Champérard.
In 2001 Patrick arrived at Le Mas Candille, joining forces
with Serge Gouloumès again for the opening of Restaurant
Candille.
