Hempnut Crusted White Chocolate Cheese Cake

Makes one 9” pie Serves 6

For the crust

2 cups graham cracker crumbs or crushed biscuits
1 cup hempnuts
½ cup powder sugar
¼ cup or enough to make the mixture stick together powder sugar 

For the filling

61/4 cups or 3lb and 2oz cream cheese (phili cream cheese, left out in room temperature)
3 cups or 1lb and 9oz sour cream
3 cups or 1lb and 9oz powder sugar
1 and 1/3 cup or 1lb and 3oz white chocolate
8 egg whites

For the crust

Preheat oven to 350F.In a stainless bowl mix together the graham crumbs, hempnuts, and powder sugar. Mix. Add the butter and mix. Make sure the mixture sticks together when squeezed between your hands.

Line a 9” round by 3-4” high spring form* pie mold with this mixture.

Bake for 10-15 minutes or until golden brown. Chill in the refrigerator.

For the filling

In a stainless bowl beat the cream cheese with the sugar. Set aside. Melt the chocolate with the sour cream in a double boiler*. Fold the chocolate mixture into the cream cheese-sugar mixture with a spatula.

Whisk the egg whites to semi hard peaks and fold into the main mixture. Pour the filling into the chilled spring form mold. Bake for 45 minutes or until firm.

Cool, refrigerate and serve with your favorite fresh fruits or berries.
