Chef Patrick Green has been the head chef at The
Field for some time now. During his interview we
were introduced to John Michael Atria, who will
be the new evening head chef.
Both chefs are well trained and were very
enthusiastic. They have each cooked for their
whole lives. Creativity is the common denominator
between them.
Patrick has been preparing his own lunch and
dinner specials for the restaurant. The
customer's have applauded all of his creations.
"This is just the tip of the iceberg. Cooking is
in my blood and I live for it", says Patrick. We
are so excited to be able to share Patrick's
Secret Corned Beef recipe with you. We thank both
of these masterful chefs for their time and
interest in sharing with our viewers.
Chef Patrick Green's
Corned Beef.
Ingredients:
Fresh Brisket of
Corned Beef-1, 4 lbs.
Pickling Spices-1/4
C.
Cinnamon Sticks-2.
Chicken Stock-1 1/2
gallons.
Green Cabbage-1
head.
Whole Red
Potatoes-5, peeled.
Carrots-3 peeled and
sliced.
Instructions:
Cook the Corned
Beef in the chicken stock, pickling spices and
cinnamon for 3 hours. Then trim off any unwanted
fat. Cut thick slices of the corned Beef. Cook
the cabbage separately. A mixture of cabbage
juice and chicken stock is mixed and used to
reheat the Corned Beef before serving. Cook the
potatoes and carrot slices. Plate the corned Beef
and vegetables and top with some Parsley Cream
Sauce
