The Field Restaurant
Hillary Joyalle is not only one of the proprietors
of The Field Irish Restaurant in Dania Beach,
Florida, but one of the most beautifully striking
women I have yet to meet in the restaurant
business.
Originally from Dublin, it is no wonder Hillary
began her career in the film industry. Her poise
and elegant manner would make anyone feel right at
home. Hillary is an industrious restaurateur.
Filled with the energy and conviction The Field
exemplifies her true nature and skills. It was very
gracious of her to take the time from her bustling
schedule to grant us this interview.
At the same time that I arrived at the restaurant,
there was a long line of patrons waiting to discuss
private party arrangements and guests waiting
to be seated for lunch.
Hillary began her career by opening a small lunch
time restaurant with a friend in Dublin.
She performed every task required in running a
successful restaurant.
She cleaned dishes and slaved over a hot stove
leaving no stone unturned. Her small restaurant
became a smashing success. Her restaurant
gained an excellent reputation for her famous
Beef Stroganoff and Ginger Carrot Soup.
Eventually Hillary moved to the United Stated. Her
self-determination led to working in half a dozen
Irish Pubs. She prepared herself by gaining all the
information she could so that she could go into
business again. Now she is a partner in The Field
Restaurant.
Upon entering The Field, you are greeted by amicable
servers wanting
to cater to your every need. " We have created a
warm and friendly atmosphere. "When you come here
we want you to feel as though you are visiting a
part of Ireland!", said Hillary. The bar is paneled
with a rich dark wood and low heavy beams are on the
ceiling all reminiscent of a traditional Irish pub.
The walls are lined with antiques and old
photographs of Irishmen and women. This all creates
a lovely old fashioned feeling.
The
old wooden bar has shelves filled with any Irish
Whiskeys or libation imaginable. The bar is stocked
with a large offering of domestic and imported beers
enough to satisfy any connoisseurs tastes.
" We have live music every Friday and Saturday
night.", says Hillary. The variety of entertainers
is diverse. Featured are famous Irish bands such as
Avalon as well as local bagpipe players.
The
large dining room is also decorated with the old
world motif. An
enormous brick open fireplace is positioned in the
center of the dining room.
This is an ingenious design, separating the dining
room into smaller, somewhat more intimate, areas.
This creates space for a family gathering or a
romantic dining experience.
The
menu selection at The Field is full of Irish
Traditional and continental cuisines. Each night
one of the chefs creates a delicious selection of
special entrees. For Saint Patrick's Day, Hillary
recommends their homemade Irish Potato Soup, Corned
Beef and Cabbage, Irish Stew, Bangers and Mash and
their secret Chocolate Banana Bread Pudding.
Some of their chefs popular specials are Potato
Crusted Salmon, Red Snapper Baked in Parchment with
Peppers, Onions, herbs, Lemon and White Wine and
Drunken Chicken which is sautéed in a Brandy Sauce.
The
most popular beverages served are Guinness Stout,
Harp, Tennants of Scotland and Magners Cider.
"Our most requested drink aside from beer is
our delicious Irish Coffee. It is the best! We
make the Irish Coffee with Jameson Irish Whiskey and
put real homemade whipped cream on the top. We
don't use the canned stuff", says Hillary.
If
you are in the mood to dine in a casual atmosphere
and want to feel as though you have just traveled
across the Atlantic Ocean to Dublin, The Field is
the dining experience for you. The traditional
Irish dishes are tasty and authentic. The dinner
specials delicious. The beverages are the envy of
any five star restaurant. The portions are
generous, the food delicious and the service is
