BAKING WITH KING ARTHUR
Savory Vegetable Quiche

You have NEVER made a quiche this easily -- toss it together (literally), bake, and it'll be ready to serve within the hour. This has become a King Arthur lunchtime favorite!
3/4 cup (3 ounces) shredded Monterey Jack cheese
3/4 cup (3 ounces) shredded cheddar cheese (sharp or mild)
3/4 cup cottage cheese
3/4 cup golden baking onions ("french-fried" onions)
1/2 cup dried red & green bell peppers
1/2 cup sun-dried tomato flakes
1 cup King Arthur Baking Mix + 1 tablespoon to sprinkle in the pan
2 teaspoons pizza dough flavor (optional, but wonderful)
1 1/4 cups milk
4 eggs
Lightly grease a 9-inch pie pan. Sprinkle the pan with 1 tablespoon of Baking Mix, and set it aside.

In a medium-sized mixing bowl, toss together the shredded cheeses, cottage cheese, onions, peppers and tomatoes. Spoon this mixture into the prepared pie pan. In a separate bowl, whisk together the baking mix, pizza dough flavor, milk, and eggs till smooth.

Pour the liquid mixture over the filling. Bake the pie in a preheated 350°F oven for 40 to 45 minutes, until a knife or cake tester inserted into the center comes out clean. For easiest slicing, let the quiche cool for 5 to 10 minutes before serving. Yield: 1 pie, 6 to 8 servings.
