Tuna Salad
Tuna fish is an old standby although maybe not found
as frequently in a pita pocket. This version is
quite simple and is minus the relish and pickles
that are found in some versions.
1 large can tuna, drained and flaked into a mixing
bowl
1/2 cup chopped onion or scallions
1/2 cup chopped celery (for fiber and crunch)
2 to 3 cloves garlic, minced
2 to 3 teaspoons lemon juice
mayonnaise (or plain yogurt for a Middle Eastern
touch as well as better nutrition -- to make the
yogurt less sour, blend in a bit of honey)
Mix this combination up in a bowl, chill and serve
in a pita or fresh baked sandwich bread.
