Ken's Tuna Salad
Ken Holloway one of our Baking Sheet subscribers
from Xenia, Ohio, sent us his tuna salad recipe:
1 7-ounce can tuna, packed in water
1/4 cup chopped onions/scallions
1/4 cup chopped celery
2 cloves garlic, minced
2 teaspoons lemon juice
3 tablespoons "Fat-free" mayonnaise
Mix all ingredients and serve. Yields: enough for 4
sandwiches. 79 calories per serving.
Note: 1/4 cup chopped sweet pickle can be
substituted for the onions, celery, garlic and lemon
juice, with calorie count moving to 86.
