Hazelnut Chip Cookies
If you're a hazelnut fan, you're sure to love these cookies.
Crisp, and packed with chips and nuts, they're a nice
variation on the usual chocolate chip cookie.
1/2 cup shortening
1/2 cup (1 stick) butter
1 teaspoon hazelnut flavor or hazelnut flavoring oil
1 teaspoon salt
1 cup Baker's Special Sugar or granulated sugar
1 egg
2 1/2 cups King Arthur Unbleached All-Purpose Flour
1 teaspoon baking soda
3/4 cup toasted, chopped hazelnuts
1 cup bittersweet or semisweet chocolate chips
1 cup white chocolate chunks
In a medium-sized mixing bowl, cream together the
shortening, butter, hazelnut flavor, salt, and sugar. Add
the egg, and beat until fluffy.
In a small bowl, whisk together the flour and the baking
soda, rubbing the soda through a small sieve if necessary,
to make sure it's lump-free. Stir in the nuts and chips.
Drop the dough by large teaspoonfuls onto lightly greased or
parchment-lined baking sheets. Bake the cookies in a
preheated 350°F oven for 10 to 12 minutes, or until they're
lightly browned. Allow the cookies to sit on the baking
sheet for 5 minutes before transferring them to a cooling
rack. Yield: 4 dozen cookies.
