King Arthur® Flour’s Carrot Fritters
They smirked as I chopped up the carrots. They
wrinkled their noses as I fried the fritters. They
had to be forced to take a taste. But once they did,
the people here in our King Arthur Flour offices
lightened up. “Hey! These are good,” was the
general response. I don’t like carrots all that
much, but these little gems, a little sweet, a
little crunchy and buttery-good, are a wonderful,
simple variation on that old lunchroom favorite,
carrot sticks.
5-6 medium-sized carrots, finely chopped or grated (not
puréed)
2 eggs
1/2 teaspoon salt
1 tablespoon sugar
1/8 teaspoon cumin (optional)
1/4 cup King Arthur Unbleached All-Purpose Flour
4 tablespoons (1/2 stick) butter
Mix carrots, eggs, salt, sugar, cumin (if desired),
and flour in a medium-size mixing bowl. Set aside.
Melt enough of the butter in a medium-size skillet
to just cover the bottom of the pan. Drop the batter
by tablespoons into the hot butter. Fry fritters for
a couple of minutes on each side, or until they’re
set and golden brown. Cool on absorbent paper.
Makes about 20 fritters.
