Chili Cheese Bread
This spicy quick bread is a snap to put together.
Serve it with a bowl of warming soup or stew.
1 1/4 cups King Arthur Traditional Whole Wheat Flour
1 cup King Arthur Unbleached All-Purpose Flour
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons cumin OR chili powder
1 1/2 cups shredded sharp cheddar cheese
1/2 cup shredded Parmesan or Romano cheese
3/4 cup water
2 eggs
2 tablespoons oil
Preheat your oven to 375°F and grease an 8 1/2 x 4
1/2-inch loaf pan.
In a medium-sized mixing bowl, whisk together the
dry ingredients and the cheeses, and set aside. In a
separate bowl, whisk together the water, eggs, and
oil. Stir this mixture into the dry ingredients,
mixing just until blended.
Scoop the batter into the greased pan and smooth the
top with a rubber spatula. If you like, top with an
additional 2 tablespoons shredded Cheddar cheese
mixed with 1 tablespoon cornmeal.
Bake the bread for 40 to 50 minutes, or until it's
golden brown and a cake tester inserted into the
center comes out clean. Remove the bread from the
oven, and after 10 minutes turn it out of the pan to
cool on a rack. Yield: 1 loaf.
