
Jon’s Pecan & Walnut butter
1
tablespoon chopped chili
1 teaspoon cumin
1 tablespoon mirin
¾ cup pecans
¾ cup walnuts
½ cup breadcrumbs
¼ cup watermelon (skin removed)
¼ cup olive oil
¼ cup tomato paste
1 jar roasted red peppers
In a food processor combine all ingredients and
blend until completely blended. Alternatively, pound
the nuts to a paste in a mortar and pestle, and then
add the other ingredients.
Spoon into a bowl, garnish with chopped cilantro.
