Mad's Miso Marinated Mahi Mahi with an Almond
Crust.
Marinade
1/2 cup olive oil
2 tablespoons chopped garlic
1 1/2 teaspoons chopped ginger
1/2 cup chopped cilantro
1 1/2 teaspoons fresh orange zest
4 6-ounce mahi mahi fillets
1/2 cup white miso paste (optional)
ground white pepper
Almond Crust
1/2 cup almonds (about 2 ounces)
1 1/2 teaspoons chopped fresh tarragon or 1/2
teaspoon dried
2 tablespoons Dijon mustard
1 tablespoon olive oil
1 teaspoon chopped fresh rosemary
1 tablespoon roasted garlic or 1 teaspoon fresh,
chopped.
Combine all marinade ingredients And marinade fish
for at least 2 hours to 2 days
.
For Fish: Finely grind almonds, Add the rest of the
ingredients into the processor. Blend Season with
salt and pepper. Transfer to small bowl.
Preheat oven to 350°F. Oil large baking sheet.
Arrange Mahi Mahi on prepared sheet. Sprinkle
lightly with salt and pepper. Spoon equal amount of
nut mixture over top of each fillet. Bake Mahi mahi
until cooked through, about 12-15 minutes
