bread toast with ricotta and strawberries

Serves 4
You'll need
I loaf or 8 thick slices fruit bread
250g reduced fat ricotta cheese
I-2 tablespoons icing sugar
1/2 teaspoon vanilla essence
500g strawberries, halved
3 passionfruit, halved
2 tablespoons maple syrup
Here's how
I. Toast the fruit bread slices until crisp and
golden. Keep warm.
2. Put the ricotta, icing sugar and vanilla
essence in a bowl and mix gently to combine.
3. Put the strawberries, passionfruit and maple
syrup in a bowl and stir gently to coat the
berries with syrup.
4. Put two slices of the toast on a plate, top
with a generous dollop of the ricotta mixture
and finish off with a couple of generous
spoonfuls of the berry mix.
This recipe is also delicious with a mix of
either banana and passionfruit, or mango and
passionfruit, instead of strawberries.
