Cocoa Almond Cookies
Because almonds are very
plentiful in our region, most of the cookies are made with
almond bases. These cookies are usually served at
weddings and other special occasion.
4 eggs
2 lbs. almonds, finely
chopped (not Blanched).
1 lb. sugar
2 shots creme de cacao
liqueur
5 T. dark cocoa
Mix all ingredients
together, roll into balls and then roll in sugar. Bake on
aluminum foil covered pan for 15 minutes at 350 degrees.
Store in airtight container. Freeze well, if you have any
extra.
