Homemade Fettuccini Alfredo.

Hold on tightly to those garter belts and
suspenders because this recipe is going to test
their elasticity. So what it's been called a
heart attack on a plate, but we really don't
care. This is probably the tastiest pasta dish
there is. I have never met a person who hasn't
swooned at the thought of this rich creamy dish .
The mixture of cheese and cream is a medley to
admire. It's so quick and simple that even a
beginner could impress any of there friends.
Serve a crisp green salad with a freshly made
Italian dressing. Top the salad with a few sliced
of red onion.
Keep it plain and simple because the diva of all
pasta entrees is about to appear. Use fresh
fettuccini noodles for a guaranteed encore. The
only trick to creating the dish is never to over
cook the pasta and sauce. As soon as the pasta is
placed into the sauce, mix gently and coat each
strand thoroughly. Do not let the pasta and sauce
cook together for too long or the dish will dry
out. Serve with some warm crusty Italian bread
and your favorite wine.
Ingredients:
Heavy Whipping
Cream-2 cups.
Freshly Grated
Pecarino Romano Cheese- 2 cups.
Salted Butter-1
stick.
Fresh Fettuccini
Pasta-1 pound.
Salt and Pepper -to
taste.
Nutmeg- a dash.
Instructions:
Place the butter in
a medium size sauce pan. Melt it on a low flame.
Add in the cream and stir the mixture until
warmed. Add in half of the Pecarino Romano Cheese
and stir until dissolved. Meanwhile in a large
pot bring water to a boil. Salt the water
slightly and add a tablespoon of olive oil to the
water to keep the pasta from sticking. Cook the
fresh pasta noodle as prescribed on the package.
This probably should not take longer that 4
minutes if it is fresh. Drain in a colander.
Place the drained pasta into the pan with the warm
sauce. Add salt and freshly cracked black
pepper. Toss the mixture until all the pasta is
coated well. Place on a platter. Sprinkle with
the additional Romano Cheese and some more cracked
black pepper. Dust with a very small amount of
nutmeg and serve immediately. Delicious with
