Another reader request! She writes "Friend wants to know how to make key-lime poundcake, not pie but poundcake".

This one should be real easy, because all the reader has to do is take our best pound cake recipe and add in grated key lime skin. The more the tarter. I would probably add in a 1/4 cup of key lime juice. I'm almost sure that it was you Dee. If you add in the quantities I suggested do you think the pound cake of yours would come out okay as Key Lime Poundcake or is that too much key lime juice?

1 (8 ounce) package cream cheese
3/4 cup butter or margarine
1 1/2 cups sugar
1 1/2 teaspoons vanilla
4 eggs
1 tablespoon grated fresh lime rind
2 1/4 cups sifted cake-and-pastry flour
1 1/2 teaspoons baking powder
icing sugar

Combine softened cream cheese, margarine, sugar and vanilla, mixing until well blended. Add eggs one at a time, mixing at low speed until well blended. Add lime rind. Gradually add flour and baking powder combined, mixing at a low speed until well blended. Spread batter in a greased and floured 9" tube or bundt pan. Bake at 325 for about 70 minutes or until cake tests done. Cool 10 minutes; remove from pan. Sift icing sugar over cake when cool.

Does that sound right? Anyone else got a recipe?

I found this one.


Key Lime Daiquiri Pound Cake

1 cup butter
1/2 cup shortening
2 cups white sugar
5 eggs
3 cups all-purpose flour
1/2 tsp baking powder
1 cup milk
2 tsp rum
1 tbsp grated key lime zest
2 tspkey lime juice
1 1/2 tsp vanilla extract
1/2 tsp lemon juice

1/4 cup white sugar
1/4 cup butter
2 tbsp key lime juice
3 tbsp rum

Directions
Preheat oven to 325 Grease
and flour a 10 inch tube pan. Mix together the flour and baking powder.
In a large bowl, cream together 1 cup butter, 1/2
cup shortening and 2 cups sugar until light and fluffy. Beat in the
eggs one at a time. Beat in the flour mixture alternately with the milk mixing just until
incorporated. Stir in 2
tablespoons rum, key lime zest, 2 teaspoons key lime juice,vanilla extract and lemon juice
Pour batter into prepared pan. Bake in a preheated oven for 90 minutes.Allow to cool in pan
10 minutes.
Turn it out onto wire rack. While warm, prick top of cake with toothpick pour key lime glaze over
warm cake. Cool completely.

To make Key Lime Daiquiri Glaze:
In small saucepan,
combine 1/4 cup sugar, 1/4 cup butter and 2 tablespoons key lime juice.
Bring to boil. Continue to boil, stirring
constantly, for 1 minute. Remove from heat and stir in 3 tablespoons of rum.
