I am looking for a recipe for japanese yeast bread as found in asian markets. It looks sort of like "american" yeast bread, but lighter, fluffier. Anyone have a recipe?

Just joined. Have you received a reply? I'm also looking for this recipe. So far internet searches haven't been fruitful.

I have found several recipes for Shokupan, but have not tried any of them out yet. If "powerful powder is bread flour, then any of these should make Shokupan.

* Powerful powder........................ 200g
* Sugar.......................... large spoon 1
* Salt............................ small spoon 1/2
* Skim milk.................. large spoon 1
* Lukewarm water...................... 130 - 140cc
* The butter........................ the 15g (it does in room temperature)
* Dry yeast................ small spoon 1 or less (3.5g)

Morning Bread
* Powerful powder 400g
* Sugar 20g
* Salt 8g
Instant dry yeast 8g
Lukewarm water 260g
No salt butter 20g
Butter for coating Proper quantity

Mountain Bread
Powerful powder 380g
Sugar 15g
Salt 6g
Non-fat dry milk 8g
Shortening 20g
Lukewarm water 250g
Instant dry yeast 4g
-----------------------------------------------------
Powerful powder 500g
Sugar 40g
Salt 4g
Instant dry yeast 8g
Milk 320g
No salt butter 80g
Instant coffee Large spoon 2
Milk Small spoon 2
Egg white Proper quantity
Salad oil for coating Proper quantity

Milk Pan
* Powerful powder 200g
* Soft flour 100g
* Sugar 30g
* Salt 6g
* Instant dry yeast 5g
* Milk 180g
* Raw cream 50g
* Shortening 40g
* Shortening for coating A little
* Milk for coating A little
----------------------------------------------------------
Powerful powder 250g
Water 180g
Skim milk 10g
Is questioned the 15g
Salt 4g
Butter 35g
Dry yeast 2.5g
